蜆 一磅 (Clams 1 lb), 蘆筍四安士 (Asparagus 4oz), 甜椒4安士 (Sweet Peppers
4oz),薑蒜蓉各少許 (Garlic & Ginger a little bit), 欖豉醬兩湯匙 (Rapeseed Sauce
2T)。

水半杯 (Water 1/2C), 糖1茶匙(Sugar 1 t),蠔油一湯匙 (Oyster sauce 1T),生抽一湯
匙 (Soysauce 1T), 美極鮮醬油 (Maggi sauce a little bit),胡椒粉麻油各少許
(Sesame oil & pepper), 粟粉半茶匙開水勾芡用 (Constarch ½ t w/ water)。
做法:

1. 蜆先用凍鹽水浸泡半小時後,沖洗乾淨備用。蘆筍去老根,去皮,切小段,甜椒
切小塊。
Soak clam in cold salty water for 30mins, and rinse. Remove the old root of
asparagus and peel it. Cut the asparagus into small pieces. Cut sweet peppers into
small pieces.
2. 蜆用開水燙熟,見到蜆開口便要撈出瀝乾備用。
Boil the clam with hot water and remove them when they open. Drain the
water.
3. 熱鑊下油, 放入料頭,欖豉醬爆香,放入蘆筍及甜椒,加入調味湯汁, 再放入
蜆肉翻炒均勻,煮半分鐘待入味,再用粟粉水勾芡兜勻,便可上碟。
Heat the pan and add oil and rapeseed sauce, then stir fry. Add asparagus and sweet
peppers. Add seasonings and clam, cook for half minute. Add thickening with
cornstarch, mix well and ready to serve.
