走地雞1隻 (Chicken 1 Whole), 冬瓜1磅 (Winter melon 1 lb), 麵筋 4 oz (Seitan 4 oz), 去
衣蒜子 3 oz (Peel Garlic 3 oz), 燒腩 4 oz (Roast pork 4 oz), 蔥切段 2條 (Green onion
2 strips), 薑粒1茶匙 (Grounded Ginger 1 t), 柱侯醬2茶匙 (Chee Hou sauce 2 t)
調味:
Seasonings:
水1 杯半 (Water 1.5 C), 蠔油1湯匙 (Oyster sauce 1 T), 糖1/2茶匙 (Sugar ½ t), 生抽1 湯
匙 (Soysauce 1 T), 胡椒粉, 麻油各少量 (Pepper & Sesame oil a little bit), 粟粉1茶匙加
水埋獻用(後落)
(Constarch solution 1 t).
做法:
Instructions:
1. 走地雞斬成小塊, 用生抽, 糖, 胡椒粉, 粟粉拌勻醃15分鐘備用.
Chop up the chicken into small pieces. Mix it with soy sauce, sugar and corn
starch for 15 mins.
2. 冬瓜留皮去瓤, 切成小方塊, 洗乾淨. 薑切小片, 蔥切短度.
Remove the gulp of winter melon and cut it into squared pieces, and rinse with
water. Cut the ginger into small pieces. Cut green onion into short pieces.
3. 麵筋一開二, 用滾水燙過後晾乾.
Cut Seitan in halves. Put it into boiling water and dry it.
4. 熱鑊下半杯油, 把原粒去皮蒜子用中火炸至金黃連油一起倒出晾油, 放入薑, 雞塊,
柱侯醬入內爆炒至香味出來, 加入冬瓜, 燒腩, 麵筋, 蒜子, 翻炒一會, 加入調味
料, 蓋上蓋子, 中火炆約10分鐘, 再加入粟粉水勾芡, 最後放入蔥度兜勻上碟
Pour ½ cup of oil into the hot pan. Put into peeled garlic and cook till it turns
golden color. Remove oil and garlic. Put into ginger, chicken and Chee Hou
sauce, cook with high heat. Add winter melon, Roast pork and garlic, cook for a
little bit. Add seasoning and put on the lid.

Chef’s Tips:
• 這是新鮮走地龍崗雞, 肉質嫰滑有鷄味
The ingredient is from organic chicken, with soft texture and rich flavor.
• 冬瓜連皮炆不會容易爛掉. 用上柱侯醬更惹味.
Do not peel the winter melon, because it won’t get mashed when
cooked. Chee Hou sauce will add more flavor to the dish.
