浸發好燕盞2隻 (Soaked Bird's nest 2 pieces)
南杏仁3 oz (Sweet almond 3oz)
北杏仁 1 oz (Bitter almond 1oz)
白米 2 oz (Rice 2oz)
冰糖 4 oz (Rock sugar 4oz)
鮮奶 2杯 (Milk 2 C)
水 2杯 (Water 2 C)
做法:
Instructions:
1. 南北杏仁, 白米洗乾淨, 用水浸泡1小時.
Wash sweet &bitter almond and rice, and soak with water for 1 hour.
2. 將杏仁, 白米, 水2杯放進攪拌機打碎, 倒出隔渣, 杏仁汁液留用.
Put almond, rice and 2 cups water into the blender and blend the mixture. Strain out the
liquid and remove the solid part.
3. 把杏汁, 鮮奶, 冰糖一同放進煲內, 煮熱至冰糖溶化.
Put almond liquid, fresh milk and rock sugar in the pot, cook till rock sugar is melted.
4. 用熱水, 加少許薑汁, 把發好燕窩慢火浸暖10分鐘, 再撈起晾乾水, 用乾布搾乾水份
Mix ginger liquid and hot water and add soaked bird nest. Cook with low heat for
10 mins. Remove the bird next and wipe out the water.
5. 準備燉盅, 把煮熱杏汁鮮奶放進, 加入燕窩, 葢好燉盅蓋, 隔水大火燉20分鐘便可享
用.
Put cooked almond liquid and milk in a stew pot. Add bird nest and put on the lid. Cook
over high heat for 20 mins.

How to soak dried Bird’s Nest
1. 熱水把燕窩浸泡2小時, 倒出放進筲箕內, 用手順紋撕開一條條, 在水喉下開水沖洗
乾淨雜物, 晾乾水, 燕窩放入碗中, 注入適量滾水, 加入少量薑汁, 以大火清燉
30分鐘, 關火焗30分鐘便可使用.
Soak the bird’s nest with hot water for 2 hours. Remove and put it in the sieve.
Tear the bird’s nest up along its grain as stripes and rinse with tap water, then dry
it. Put the bird’s nest in the boil, add some boiled water and a little ginger liquid.
Stew 30 mins over high heat. Turn off the stove and keep the lid on for 30 mins.
2. 如浸發好燕窩未能即時用, 可放入密封玻璃盒內用清水浸著, 放進冰箱, 可儲存一
星期.

it with some water. Put the container in the fridge. The maximum storage time is one
week.
3. 一般乾燕窩浸發後會漲大五倍, 燉好後更會發大八倍.
